Family traditions are things that we hold near and dear to us. Whether it be a picnic on 4th of July or a traditional dinner for Thanksgiving, coming together to share our daily lives and adventures is something we should always cherish. This past weekend I was blessed to spend time with a family that has embraced me as one of their own. After the loss of my parents and brother throughout the last 15 years I was blessed to become part of the Hopperton family, and this past weekend we gathered to celebrate Brenda and Terry”s 50th wedding anniversary. Since we were traveling to Kentucky Dam Village state park, in western Kentucky, I was a little preoccupied. I didn’t want to leave my article blank, this week I am posting a recipe that was passed down to me by my Grandma Mackey. I hope you enjoy this recipe, it’s one of my favorite things she made.
Grandma Mackey’s 7 layer salad
In a clear glass bowl layer the following ingredients, refrigerate until ready to serve
Diced green peppers
Thawed frozen peas
Grated Parmesan Cheese
Chopped cooked bacon
I wish I had what the measurements were, but grandma made this salad so many times she would eyeball it…..it’s what grandma’s do.. So make it big or make it small it’s up to you. This is an easy go to salad perfect for an end of summer cookout. I hope everyone has a wonderful week and I will be back to writing all about Patriot very soon.
