The sounds of summer are upon us, from children playing at the ballpark to motorcycles up and down the road, we are gearing up for a hopeful summer.

  On Monday May 31st, we will be celebrating Memorial Day, a day to remember all the men and women who have given the ultimate sacrifice for our freedom. With the holiday fast approaching and the forecast to be overcast but in the 80’s a lot of people will be enjoying the outdoors with family and friends.

  Last week I wrote that I was going to be sharing some recipes this week for the upcoming summertime celebration and with the help of Patriot residents past and present, I have two wonderful recipes to share. Thank you Wanda Benzing and Jill Hutcherson.

Wanda Benzing’s

Corn Salad 

(2) 15 oz cans whole kernel corn drained; 1 yellow 1 white

1 c green pepper chopped. Can use red, yellow, and/or orange for color

½ c red onion diced

1 c mayonnaise 

2 c grated cheddar cheese 

1 15 oz can black beans, rinsed and drained, (optional) 

10.5 oz   bag  of Fritos chili cheese corn chips

  Mix all the ingredients except the corn chips. Chill several hours before serving. Can be eaten with a fork or as a dip with the Fritos . Some of the corn chips may be coarsely  crushed and added to the corn salad before serving or crumbled on top.

Berry Delight- Strawberry

1 ½ c Graham cracker crumbs 

¼ c sugar 

⅓ c oleo melted 

Mix these together and press into 9×13 “ pan and chill for 15 min

1  8 oz cream cheese

¼ c sugar

2 Tbsp milk

1 ½ c Cool Whip

2 pints of strawberries- halved

  Beat the cream cheese, sugar and milk until smooth fold in Cool Whip. Spread over crust.

  Slice berries and place over mixture

2 pkg instant vanilla pudding 

3 ½ c of milk

  Prepare Jello pudding and pour over berries, Chill overnight and top with Cool whip before serving

  Also this week: the Pacers Youth baseball and softball teams will be playing in Patriot at the ballpark on May 24th, 25th and 26th, please get out and support our hometown teams.

  The Scout Troop # 700 is hard at work getting ready for its upcoming trip to Tennessee with physical endurance training along with map, compass and first aid. I’ll have more on their trip next week.
