The most recent monsoon struck just before I was able to finish mowing. Darn the bad luck! That, coupled with the fact that I have finally finished off all of the half-priced Easter candy, means it’s time to get serious! No more robin eggs or gooey chicks, it’s time for salad!
Our next Red HOT Hatters outing will be a day long visit to Batar’s in Seymour, Indian. It is an exquisite restaurant and bakery located on Highway US 50, east of I-65. We are planning on carpooling and leaving at approximately Vevay by 9:30 a.m. on Wednesday, June 14th in order to be there before it opens at 11 a.m. We will meet at the Jeff-Craig Fire Department on Highway 56 (Ferry Street) across from the Most Sorrowful Mother of God Catholic Church. The Concordia Ladies of the Concord Community Church will be having their yearly Yard Sale on two consecutive weekends this year: Friday and Saturday, June 2nd-3rd; and June 9th-10th. No Thursdays this year! The doors normally open around 8 a.m. The church is located at 196 Concord Road outside of Patriot and off of Highway 156 at Sand Run Road.
Our Red “Not-So-HOT” Hatter June Lack is still undergoing rehab. Cards can be sent to her home address where she lives with her nephew: 11317 Scotts Ridge, Rising Sun, Indiana, 47040.
Donations of household items, books, clothes and et cetera are also being accepted by the Red HOT Hatters for the County Wide Yard Sale, also to be held on Saturday, June 17th. This is one of my favorite desserts but it’s a bit complicated! Follow the instructions and it will come out perfectly. Don’t and it’s still yummy, but not as fun to look at. If properly mixed, when it comes out of the oven it looks like it has exploded. Part of it ‘sinks’ and the nuts and coconut rise. Thus the name –
1 box of
German Chocolate cake mix
1 1/3 cup of Water
½ cup of Oil
1 cup of Coconut
½ cup of chopped Walnuts
8 oz. Softened Cream Cheese
1 stick Softened Butter
2 cups Powdered Sugar
1 tsp. Vanilla
1 Pkg. Chocolate chips
1. Preheat oven at 350 degrees and lightly spray a 9″ x 13″ pan with cooking spray.
2. In the bottom of the pan, put in the coconut and the nuts.
3. Mix the cake as per the cake instructions.
4. Spread the batter into the pan and over the coconut and nuts.
5. In a bowl, mix the cream cheese, butter, vanilla, and powdered sugar until fluffy. Spread this mixture over the cake batter in the pan.
6. Sprinkle the chocolate chips on top.
7. Bake at 350 for 50 minutes. Cool before serving.
